Roast Vegetable Pasta Salad

Serves 4
Ingredients
2 medium desiree potatoes, unpeeled and chopped
400g sweet potato, peeled and chopped
2 carrots peeled and chooped
2/3 cups of wholemeal penne
1/2 cup of frozen peas and corn mixture
1 tablespoon of lemon juice
1 tablespoon of extra Virgin olive oil

Place potatoes, sweet potatoes and carrots in a roasting pan lined with baking paper. Spray with oil and season with black pepper
Cook in a hot oven (200C) for 35 minutes.
Cook pasta in a hot pot full of boiling water for 8 minutes
Serve vegetables with pasta
Enjoy!

NB: You can leave some of it for uni the next day
