Salmon salad and rice

As part of Bupa's best blog competition for 2015

This is a really good salad for lunch as it has your omega 3 fats and lots of vegetables. This is only 100 cal per serving. My housemate bought some salmon one day and forgot to finish it, so in the end I finished it with this salad. The only things I bought were the veg and the rice (well actually no the rice was left over from the other night). My veg would have costed me about $2-$3 altogether.



Ingredients
3 tblspoons of cooked rice
Smoked salmon
corn kernels
Cucumber
celery
red onion

Method
Cool the rice for a few hours
Chop the cucumber and celery
Slice the red onion
Mix everything together

Enjoy

Note: this can be with or without sauce. But with sauce I recommend tabasco or sweet chilli sauce.
