Pork and Corn salad

As part of Bupa's best blog competition for 2015

This dish is good for a late night dinner dish or a late lunch at home. For the meat I enjoyed last nights leftovers but for the veg my veg would have costed me about $1.50 altogether at the supermarket. That is if I bought one small capsicum, some corn and a small Lebanese cucumber.

I am a fan of meat but I try not to put too much of it into one dish as it can be very fatty for you. Instead I try to load my plate with lots of vegetables.

Ingredients:
Last nights leftover pork
Corn kernels
Diced cucumber
Diced Capsicum


Method
stir everything together.

This salad would be great with some Tabasco sauce but if you are not a fan of Tabasco you could have it without sauce
